Aqua Restaurant Group’s new Italian restaurant Vista has opened atop One Peking in Tsim Sha Tsui in the former home of aqua, bringing ‘The Real Italian Deal’ of bold home-style flavours from different regions of Italy. Living up to its name, Vista is set against a stunning sky-high backdrop of glittering panoramic views of Victoria Harbour and Hong Kong Island. Each of its intimate dining booths and tiered tables nestled between luscious green plants, offers amazing vistas and feels like you are dining in a garden in the sky.
In the kitchen, Executive Chef Andrea Mura serves up the best of elevated yet still highly accessible Italian cooking, from appetisers of crispy-thin pizza and cicchetti (the Venetian version of tapas, which are served at traditional bàcari bars) to handcrafted pastas and sumptuous platters of grilled seafood.
Signature dishes include BBQ pulled pork maritozzi sandwiches with crispy crackling. Inspired by the traditional Roman sweet pastry, Chef Mura has updated the dish into a mouth-watering savoury starter. Followed by Italian Saffron & sausage risotto and Alba white truffle tagliolini, a traditional recipe of Piedmont twinning thin ribbon pasta with the region’s treasured ‘white gold’ truffle.
A highly instagrammable Grilled seafood platter is styled for two in a glorious ocean symphony of lobster, calamari, prawns, octopus and scallops. There is also Lobster and lime linguine – a refreshing, seafood pasta alternative. A richly flavoured, super crispy and tender Milanese-style 450g breaded veal cutlet with shaved black truffle and truffle mayonnaise is also perfect for sharing, as is the whole Salt-baked seabass with vegetable caponata and salmoriglio sauce which is dramatically flamed table side.
Among Vista’s crispy thin-crust pizzas, traditional mozzarella cheese is unusually softened with creamy burrata, combining a luxury topping of mortadella and Bronte pistachio, a Sicilian treasure nicknamed ‘green gold’.
For dessert, the all-time homemade favourite table-side Tiramisu is created in front of your own eyes – and uniquely comes in a choice of three different flavours: traditional mascarpone, pistachio or hazelnut.
“From the moment you step into Vista’s lobby you are surrounded by luscious greenery and plants. We are bringing guests the chance to dine in a garden in the sky and enjoy the very best Italian dishes – ‘The Real Italian Deal’.” says Aqua Restaurant Group’s Director of Operations, Alex Bellafronte, who comes from Torino in Italy.
For New Year’s Eve, Vista presents 5-courses with plenty of seafood served alongside panoramic views of Victoria Harbour for the countdown.
